Hot Tea Brewing Instructions:

Bring spring or filtered drinking water to 170°F in a kettle. Add 1 tsp of tea leafs to a cup. Always pour boiling water over tea leafs and let steep 3 minutes.

Any of these variables can be changed to suit your particular palate, so experiment! Many teas can be steeped multiple times (especially green, white, and oolong). When steeping a tea multiple times increase the length of steep time slightly with each successive infusion.

Iced Tea Brewing Instructions:

1) Hot water method: For 1 gallon of iced tea, bring half a gallon of filtered water to boil in a pot. Turn off heat, and add 3 tablespoons (1 oz of tea), let steep for 3 minutes. Strain the tea into the other half gallon of cool water and refrigerate. If you want to serve immediately, you can pour the concentrate over ice to cool and dilute, then pour over ice again.

2) Sun tea: use a glass container and add 1 tsp of loose tea of each cup of water directly into the jug. Then set in the sun for a few hours, tasting occasionally to get the desired strength.

3) Cold brew: The slow cold-water-steeping method extracts natural sweetness and flavor from the tea leaf. It lessens the bitterness and tangy-ness produced by tannic acid so your tea tastes smooth and mild. Add 1 tsp of tea per cup of cold water and put in the refrigerator. When the water is chilled, your tea will be ready!

If you would like to make tea like the Moroccans do, then buy our pure gunpowder green tea follow these instructions.:

  • In a teapot, combine two teaspoons of tea-leaf with half a litre of boiled water. Allow it to steep for ten to fifteen minutes.
  • Without stirring, filter the mixture into a stainless steel pot, so that the tea leaves and coarse powder are removed.
  • Add 5 teaspoons of sugar.
  • Bring back up to boil over a medium heat. This important step in the preparation process allows the sugar to undergo hydrolysis, giving the tea its distinctive taste.
  • Pour over fresh mint leaves crushed in the glass.

This is a really nice tea. I am not a huge fan of gunpowder green tea, but the peppermint and spearmint come through really nicely. I like this tea cold brewed over heated. But, that is a personal choice. Cold brew is a great way to drink tea. By not heating it, you are not releasing the tannins and you can add cold water over and over again. Also you retain more antioxidants than hot brew and also it releases only have the caffeine. I usually can add water 2-3 more times to my glass. If I have bagged tea I do one bag per 8 oz of water. When I do the loose leaf in a pitcher, I generally eye ball it, but if you want something more specific go with 4 Tbsp per 1 quart.

Rarely drink anything other than black tea, but tried this and just loved it. Very soothing after-dinner or bedtime beverage.
