This is a delicate tea that requires attention paid to water temp and steeping time. Do not boil this tea! I use an electric kettle that allows precise water temperatures so I can steep this tea at exactly 160 degrees for 2 minutes. This makes perfect green tea. If you boil the water, the tea will be too grassy. You can steep for a longer time on a third infusion, but don't boil the water.
